Teriyaki Grilled Ham and Cheese Sandwich

I promise these are the last photos from my old camera. But, this sandwich was really good! The kids really enjoyed it as a different treat for dinner, now to only find a soup that it will go really good with. We just had it with salad instead of soup.

If you have leftover ham; then you take pineapple and cheese put them in between 2 slices of bread, glaze with teriyaki sauce and walah! You have a Teriyaki Grilled Ham and Cheese Sandwich.

What I used:
leftover spiral sliced honey ham
pineapple slices cut into wedges
havarti cheese (you can also use cheddar, that is what my daughter wanted instead of havarti, I just like havarti because it melts easy and becomes really gooey with cheese)
leftover teriyaki glaze from shish kebabs
2 slices bread
butter

Just build the sandwich, with bread spread with butter and down on grill (butter side down), then add the cheese; then the ham; glaze with teriyaki sauce; then add pineapple; and glaze with more teriyaki sauce; then one more slice cheese; then slice of bread; spread with butter and put on griddle and cook until golden brown and cheese is melted.

Tutti Frutti Peanut Butter Sandwich Contest Entry

Here it is!! It is my contest entry for The Peanut Butter Boy's contest at his site (the link is below). I recruited the help of my 10 yr old daughter since she is the peanut butter freak in the house. I figured if she loved it, than it was a hit! She definitely said this was my contest entry as you can tell by the happy face here!



We combined the sweetness of fruit to the richness of the peanut butter and some cream cheese to get this wonderful double decker sandwich on raisin bread. It can be a wonderful breakfast if you toast the bread, a lunchbox treat that is nutritious, or even that after school snack that will keep the kids full until dinner. I think I have a winner with this one, it is so simple yet nutritious and highly portable. I used my own homemade strawberry freezer jam (since it is chunky) and then you can use corn flakes for a little crunch or if you are fixing it for breakfast. My daughter loved it with the crunch of the corn flakes, but that is personal preference. Here is how I did it:

Tutti Frutti Peanut Butter Sandwich

3 slices raisin bread
peanut butter
cream cheese
strawberry jam
1/2 banana (sliced lengthwise into long strips)
thin slices of apple with skin
corn flakes (if desired)

Spread peanut butter on all 3 slices of bread. On the bottom slice, spread the strawberry jam on the peanut butter and place 3-4 apple slices on that. For the middle slice, spread one side with cream cheese and one side with peanut butter (this gets kind of messy, but only for a second I promise!). Lay on top of the bottom slice cream cheese side down. On the middle slice, place a layer of banana slices and then corn flakes if desired. Top with final slice, peanut butter side down. Cut into quarters and enjoy with some fruit on the side and a glass of milk. Here is a picture of the finished product:

(And I know my camera is not the best, this picture does not do this sandwich justice. Oh well, at least everyone will know what I am buying with my tax return... a new camera!! But, gotta make do with what I have for now.)

Not Your Normal Grilled Cheese Sandwich

This is not your normal grilled cheese sandwich, it is different but it tastes very good. I have had people say I was crazy to put Havarti cheese with strawberry jam but trust me... it is yummy! We first saw this on TV a couple years ago and we have been eating them since. We saw it on Ham On The Street from Food Network, when that show was still on, I do not know what happened to that show, we thought it was good. Just try this sandwich one time, it is addicting. You have to use regular Havarti cheese because any flavored Havarti is not good. Try one out and let me know what you think. (ignore the cut in one of the halves in the picture, I thought I was cutting it into fourths for my youngest daughter until she told me she wanted her own sandwich LOL)

Not Your Normal Grilled Cheese Sandwich

2 slices bread (sourdough or french work best we think)
2 slices deli style Havarti Cheese
Strawberry Jam
Butter

Butter the pieces of bread and lay them face down on a griddle. Add one slice of cheese then the jam and then one more slice of cheese. Put the sandwich together and grill at about 375 degrees until golden brown. Enjoy!

Notes:
- Sourdough or French breads work well, you can use any kind of bread
- I used my own homemade strawberry freezer jam, but raspberry also works good.

Crock Pot French Dip Sandwiches


Crock Pot French Dip Sandwiches

4 lb chuck roast
6 garlic cloves
1 can (10.5 oz) beef broth
1 can (10.5 oz) condensed French Onion Soup
1 can (12 oz) Coca-Cola
6 french rolls or soft deli style rolls
2 Tbsp butter or margarine

Trim excess fat from roast. Make 6 slits in the roast, and place a garlic clove into each cut. Place roast in crock pot.

Add beef broth, french onion soup, and coca-cola. Cook on low for 6-8 hours.

Split french rolls and spread with butter or margarine. Bake 7-10 minutes at 350 degrees or until heated through.

Slice the meat and place on rolls. Serve with sauce for dipping.

Notes:
*I also put cheddar cheese on the sandwiches, we like cheese.
*For something different try it with cream cheese and cheddar cheese on the rolls, it is very yummy!

BBQ Beef Sandwiches

Friday night we had BBQ beef sandwiches from the crock pot for dinner. They were simply scrumptious! (coming up is what I do with the leftover BBQ beef... I make pizza with it! coming soon) anyway, it is so super simple to make if you like BBQ like we do (during the summer we BBQ everything we can, it is hubby's choice method of cooking). I just started out with a regular chuck beef roast; mine was about 3-4 lbs. I made my favorite BBQ rub (I make my own rubs and will share the recipes) and smothered the roast with it the night before

Then, you just put it in the crock pot for about 6 hours on low and leave it alone. Of course you have to put liquid in with the roast (which I used what else? 1/8 cup of Coke to tenderize the meat as always) plus about 1/4 cup water and then I used the liquid left in the bottom of the baking dish that I had the meat in. The rub after a while becomes liquid in the bottom of the pan while the roast is absorbing the rub flavor into the meat. That is good stuff, by all means dump that juice in with the roast for extra flavor. You can also throw in a teaspoon of liquid smoke if you like your BBQ somewhat smoky flavored. Sometimes I do, and sometimes I don't throw that in; just depends on what I feel like eating.

After the 6 hours, you remove it (watch out it will fall apart upon removing and you should use a slotted spoon to get it out rather than a fork, a fork will just break it up and you would have to use that slotted spoon anyway). Place it on a cookie sheet and using 2 forks just start shredding. It should look like this, if it is tenderized correctly (see below 2 pictures):

Doesn't that look yummy? Oh it is, trust me on this one! Then after you have shredded it, put it in a bowl and put BBQ sauce over it (if you like saucy BBQ beef) or you can eat it dry like this (it still has the flavor of the BBQ rub on it so it will still taste like BBQ). We served it with tater tots and green salad. This is a family favorite!

To freeze the leftovers for something else later, just put cooled leftovers into a freezer bag and freeze. When I need this leftover BBQ beef, I will just thaw it out and use it to make BBQ pizza (which is awesome and when I thaw out the beef for something for dinner, I will post about the pizza). It is a great way to use the leftover BBQ Beef. After all, we all love pizza!
